Where can I buy Dutch processed cocoa powder in Mtl.?

A cake recipe I want to make calls for Dutch processed cocoa powder. I've tried the local bulk food stores and they don't carry it. If I can't get it what is a good substitute?

It makes a difference. My cakes without it are so nasty. I went in and out of about 10 grocery stores in NYC. About half of them had it and the others didn't. Also, if you have a Jewish neighborhood, for some reason kosher grocery store pretty much always have it, but I think you are in Montreal and I know Toronto would have such stores because they are known to have a Jewish population, but I'm not sure about Montreal. It's generally with the baking supplies and regular cocoa. Sometimes stores put cocoa with hot chocolate mixes. If you find non dutch (Hershey's and Toll House) then it has to be with that.

It usually comes in a box-red or black for most brands, but I've seen it packaged other ways like canisters.

Also, you can buy it on Amazon.

If you're really stuck, Hershey's dark is part dutch, part regular

Any cocoa powder is a valid substitute. Dutch processed cocoa is alkalized (essentially slightly less acidic). Not a huge deal if you use non alkalized cocoa

I actually stopped buying it because I don't go through enough cocoa to keep both dutch processed and regular cocoa in my pantry. I make a flourless chocolate cake that calls for dutch processed cocoa. Delicious cake. For years, I only used dutch processed to make it then one time a few years ago, I made it with regular cocoa and didn't even notice the difference. But, DO buy a good quality cocoa.

Mark is right, Fry's available in the grocery stores is fine, I buy 2 types here in Toronto at the the Bulk Barn, regular and Red Ruddy, if you can get to one the Italian grocery stores they may have Droste` from Holland, I have used it and for the cost Fry's fine

sure, the regular grocery shops carry the two sorts of cocoa. sure, you're able to do the substitution, yet!! it is going to alter the flavour of the recipe. you are going to be able to additionally use the dark Hershey cocoa powder for a greater effective substitution.
