Why did the Boltons Cut off Jaime Lannister's hand?
Doesn't this mess with the whole dynamic of the book, I mean the Lannisters give the Boltons Winterfell, surely they wouldn't do this now? Alot of people are calling the guy who cut his hand off fake Vargo Hoat but he was a Bolton. Also if anyone knows who Varys had hidden in his bunker on this weeks episode "And now his watch has ended" and the name of the two men who killed the Lord Commander( I think the fat one is Rasp or Rast) I'd be delighted to hear the answers

Cutting off Jamie's hand was an integral part of the novels. Vargo Hoat ( this character is not included in the tv show) had a fetish for maiming prisoners and Jamie was no exception. In the novel, Hoat is a mercenary who worked for the Lannisters but betrayed them to work for Roose Bolton. So even without Hoat, HBO had to include the maiming of Jamie in the show. It sets up his whole future character development.
The plot to kill Mormont took much longer to develop in the novel and began at the Fist of the First Men. HBO shortened it so much that the guy who killed him is only shown in this one episode. I don't know if anyone in the show even mentioned his name.
