What are your tips for making a great Thai curry?

Green, red, otherwise...

    Hey kee hope you're well,

    I use Mae Sri or Mae ploy curry. Fry minced garlic with oil first (about 20 sec) then add curry paste reduce heat.

    Give it about 2 mins. For it to purge up the aroma then add your protein. In your case none hahaha

    Add coconut milk. Once it boiled, add in carrots and bamboo shoots (I like shoestrings size) let it boil add in fish sauce. Test taste

    If too thick add water or veg stock

    Add kafir lime and basil leaves

    Taste for final adjustment
