the hardcore is pretty easy,just start your game and finish one of the endings in hardcore on very easy or easy.for pickpocket,go to vault 21,then when people are sleeping go up to them,make a save,sneak,pickpocket.if you get caught reload and try again.make a save after each successful pickpocket.if you need more help email me through yahoo answers.hope this helps.
