Can Whole Milk Mozzarella Be Frozen?
I wanted whole milk Mozzarella for a recipe but the store only had it in 5 lb bricks - so I bought one. It would take us months to use up this much Mozzarella. I'd like to freeze it in reasonably-sized chunks for later use. The frozen cheese would be used in baked recipes and not eaten as is.

cheese freezes very well BUT it does get crumbly after being frozen...this is a texture issue only.
It still melts very well and the flavor is the same.
No it does NOT get dry, particularly if you wrap it tightly.
Keep in mind that mozzerella cheese in a frozen state in on EVERY frozen pizza or frozen lasagna, both home made and from the store. It still melts just fine.
I personally would shred the whole thing and then freeze it in bags for the next time you need some Mozzarella.

I agree that it would be best grated and put into zipper bags in 1 and 2 cup portions and frozen that way. It will be ready to use in just about any recipe right out of the freezer.

if i where you i would not freeze cheese just because it would get icy like a Popsicle and get very soggy when it thaws. it is just like if you freeze lettuce, the water will freeze turn to ice and when ice melts it turns to water when it turns to water it turns the lettuce soggy. same thing but milk instead of water

Yes, but it will be dry once thawed. Might be ok if you're just using it for cooking
