What is your favorite thing to eat for dinner?

Hmm... that's a tough one. There are so many yummy vegan foods out there! How could I choose just one meal? Well, you can't go wrong with brown rice, beans, and steamed veggies. Top it off with some low sodium soy sauce? Simple I know, but so unbelievably DELICIOUS!

Currently, Raw corn with miso paste, chopped parsley and red chili.

Grapefruit with kinako, it's kind of the japanese version of peanut butter, and some cold soba with sesame seeds and plum sauce. THe soba is really really good.

My favorite vegarian dinner is either cilantro lime rice and black bean burritos or collard greens mixed in rice.

My homemade veggie chili made with tomato V8 juice, squash, carrots, chickpeas, kidney beans, northern beans, corn, roasted tomatoes, and veggie "meat" crumbles.

I also love whipping up quesadillas with veggies cooked in a bit of olive oil with tofu and a sprinkle of cheese, sometimes with black beans for flavor and protein.
