meat replacements to my low-carb diet?
I love onions, carrots, turnips, parsnips, Brussels etc. I love beans. I just CAN'T do the meat anymore. I have never really liked meat that much...it's too bland even when I season it. I also don't like the texture, all I can picture when I'm eating it is dead bodies and guts, and I feel like crap after I eat it. I don't mind the eggs so much but I'm getting tired of eating them everyday.
Is there a different way to low-carb? I miss my veggies...I go over my amount everyday because of vegetables. for example..usual day for me:
breakfast: green pepper with hummus, a boiled egg, big salad.
Lunch: BIG salad with spinach, onion, tomato, green pepper, cucumber, and beans w/buffalo sauce
Snack: handful of nuts, carrots, spoonful of cashew butter
Dinner: Veggie fried mix: turnips, spinach, green pepper, onion, carrot, cauliflower, broccoli, chickpeas, peas, green beans, and Brussels is some kind of butter sauce or something.
That is what I ate yesterday and I went over my carb limit but I don't see it as bad...I still want to keep my carbs down so what should I eat???
I am asking this here because I know vegans and vegetarians could probably give me better answers. THANKS!!!

The only carbs you really need to avoid or minimize are those from sugars, grains, and refined starches in general. Those are the unhealthy carbs, that kill health and promote weight gain, when consumed in excess of tiny amounts.
Counting carbs on things like vegetables, lower-sugar fruits, nuts/seeds, and even most legumes is pretty foolhardy - considering that those are the healthy types of carbs you should be eating daily for about 40-45% of your diet.
Also, don't skimp on healthy, unrefined/natural fats. They should comprise 30-40% of your daily calories. The only fats you really need to always avoid are the types found in refined cooking oils of all types, hydrogenated or not. Oils like raw virgin coconut oil are 100% healthy, and the best for most cooking (you should never be cooking/frying anything at higher temperatures than 350F).

I also don't drink soda, but if I did, I would not drink any sugar free ones. I do drink coffee and put French Vanilla coffeemate in my coffee, but I use the regular and not the fat-free or sugar free ones. They don't taste the same and sugar-free means they put in a substitute sweetener in it and that is bad for you. I can't have anything with subsitute sweeteners because I get sick from it. I just found out last week that these sweeteners were originally RAT POISON and someone then decided that it is harmless to people and started making sugar substitutes for human consumption. Pretty gross, huh? Good luck on your diet!

What is the staple food in asian countries such as Japan and China? RICE!
Is rice high in carbs? YES!
Do western countries recommend a high carb starchy diet if you want to lose weight? No!
It's high protein, low carb diets they put people on if they want to lose weight over here. Animal fat and protein is the main cause for obesity and many diseases. Humans are made to eat starchy food.

Your diet sounds fine (minus the egg and butter for me). Unless you have some kind of health condition where you have to avoid carbohydrates, you should do fine with lots of vegetables, beans, and nuts.
