In my experience, the easiest to play would be Spring. You will need two other violinists in your orchestra who are willing to play a few measures of easy solo licks, however -- in the first movement. If you perform with keyboard accompaniment only, this, of course, would not be a problem.
Have a great time with these four concerti. They are all well worth working up and performing.

I don't have a list or anything but the easiest in my opinion is the 2nd movement of winter.
