It doesn't sound as though you are using a recipe and it is important that you follow a recipe especially when baking. It is also important to read through the recipe to be sure you have all the ingredients, the proper size baking pans and utensils you need to put the cake together, before you even start the recipe. Some recipes require that the eggs go into the batter separately and some recipes require all the wet ingredients be mixed together and all the dry ingredients be mixed together and then combined.

This is a very simple one pan chocolate cake and frosting recipe has been cut and pasted from the Joy of Baking website. I have made this cake and it was a hit in my house. The measurements etc. are in both U.S. and UK measurements. There is a video and tips on the website for this cake. Since you are unsure how to make the cake, you really should go to the website and watch the video etc. Here is the link.

If you want to bake something a bit fancier, just check the Joy of Baking website for Chocolate Layer Cakes. Most of their recipe also have instructional videos and almost all their recipe are tested.

    Chocolate Cake:

1 1/2 cups (195 grams) all purpose flour

1 cup (200 grams) granulated white sugar

1/4 cup (25 grams) unsweetened cocoa powder (not Dutch-processed), sifted

    1 teaspoon baking powder

    3/4 teaspoon baking soda

    1/4 teaspoon salt

1/3 cup (75 grams) unsalted butter, melted

1 cup (240 ml) warm water

1 tablespoon lemon juice (or vinegar)

    1 teaspoon pure vanilla extract

    Chocolate Frosting:

    6 ounces (170 grams) semi-sweet chocolate, chopped

3/4 cup (180 ml) heavy cream (35% butterfat)

1 tablespoon unsalted butter, room temperature

    Chocolate Cake:

Preheat oven to 350 degrees F (177 degrees C) and place rack in center of oven.

In an ungreased 8 inch (20 cm) square cake pan, stir together the flour, sugar, sifted cocoa powder, baking powder, baking soda, and salt.

Add the melted butter, water, lemon juice, and vanilla extract. With a fork, mix all the ingredients together until well blended.

Bake in preheated oven for about 30 minutes, or until the cake springs back when lightly pressed and a toothpick inserted in the center of the cake comes out clean. Remove from oven and place on a wire rack to cool.

    Frosting:

Place the chopped chocolate, cream, and butter in a heatproof bowl. Place over a saucepan of simmering water and melt until smooth. Remove from heat and let stand at room temperature until it is of pouring consistency. Then pour the frosting over the cooled cake. Let stand until frosting has thickened.

    Serves 8 - 10 people.

Here's a delicious Chocolate cake and frosting recipe. Enjoy

    FOR THE CAKE

    2 cups sugar

    1 3/4 cups all-purpose flour

    3/4 cup cocoa

    1 1/2 teaspoons baking powder

    1 1/2 teaspoons baking soda

    1 teaspoon salt

    2 eggs

    1 cup milk

    1/2 cup vegetable oil

    2 teaspoons vanilla extract

    1 cup boiling water

    FOR THE FROSTING

1/2 cup butter or 1/2 cup margarine

    2/3 cup cocoa

3 cups powdered sugar (icing sugar)

    1/3 cup milk

    1 teaspoon vanilla extract

    Method:

CAKE : Heat oven to 350 degrees. Combine dry ingredients in large bowl. Add eggs, milk, oil and vanilla. Beat on medium speed 2 minutes. Stir in boiling water (batter will be thin). Pour into 2 greased and floured 9" round pans. Bake 30-35 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes, then remove to wire racks and cool completely. Frost with Chocolate Frosting. This also makes about 30 cupcakes.

FROSTING: Melt butter. Stir in cocoa. Alternately add powdered sugar and milk, beating on medium speed to spreading consistency. Add more milk, if needed.

    Cook time 30 mins

    Total time 45 mins

    Ingredients:

    Chocolate Cake:

    2 cups all-purpose flour

    2 cups sugar

    ¾ cup cocoa

    2 teaspoons baking powder

    1½ teaspoons baking soda

    1 teaspoon salt

    1 teaspoon espresso powder

    1 cup milk

    ½ cup vegetable oil

    2 eggs

    2 teaspoons vanilla extract

    1 cup boiling water

    Chocolate Frosting:

    1½ cups butter (3 sticks)

    1 cup cocoa

    5 cups confectioner’s sugar

    ½ cup milk

    2 teaspoons vanilla extract

    ½ teaspoon espresso powder

    Instructions:

Preheat oven to 350º F. Prepare two 9-inch cake pans by spraying with baking spray or buttering and lightly flouring.

    For the cake:

Add flour, sugar, cocoa, baking powder, baking soda, salt and espresso powder to a large bowl or the bowl of a stand mixer. Whisk through to combine or, using your paddle attachment, stir through flour mixture until combined well.

Add milk, vegetable oil, eggs, and vanilla to flour mixture and mix together on medium speed until well combined. Reduce speed and carefully add boiling water to the cake batter. Beat on high speed for about 1 minute to add air to the batter.

Distribute cake batter evenly between the two prepared cake pans. Bake for 30-35 minutes, until a toothpick or cake tester inserted in the center comes out clean.

Remove from the oven and allow to cool for 10 minutes.

    Frost cake with Chocolate Frosting.

    For the Chocolate Frosting:

Add cocoa to a large bowl or bowl of stand mixer. Whisk through to remove any lumps.

Melt butter and pour into bowl with cocoa powder. Whisk together until well-combined.

Add sugar and milk to cocoa mixture by adding 1 cup of sugar followed by about a tablespoon of milk. After each addition has been combined, turn mixer onto a high speed for about a minute. Repeat until all sugar and milk have been added.

Add vanilla extract and espresso powder and combine well.

If frosting appears too dry, add more milk, a tablespoon at a time until it reaches the right consistency. If it appears to wet and does not hold its form, add more confectioner’s sugar, a tablespoon at a time until it reaches the right consistency.

Wish ur hubby happy b'day!!! Enjoy :) :)
