Just what am I buying?
I buy Lamb Chops from a Supermarket and they taste foul and are as tough as old Doc Martins.

I have noticed this. Not just with lamb, but beef steaks too and, most of all, pork, which is often completely flavourless these days.
I am not someone who likes to 'bash' supermarkets. Generally I approve of them as they have brought choice, value and convenience like no other retailers,. However, this is one area they seem to really fail badly. I don't know why this should be, as they must have access to the best suppliers. It is easy for some to say we should buy meat from local butchers, and when I do that it is normally much better. but that's not always possible for all of us, and I don't understand why it should be necessary.
One tip I have found is that the frozen lamb-chops from the supermarket freezer section are often much tastier than the supposedly fresh ones on their shelves.

Could be one or more of 3 problems.
1.... you are not cooking them correctly.
2... your market is improperly identifying Mutton as Lamb. Is the fat on the "lamb" white or more yellow? More yellow the older the critter was when it was slaughtered.
3.... It is possible that your market has misidentified goat as lamb. Not likely as goat is a bit more difficult to find and most markets do not carry it but it depends on your local and what is available.

Buy it fresh from the butchers, depending on the size they can advise you on best eat and time to cook it
