Best way to peel fresh egg plants?

It seems I always make a mess and end up just slicing off the outer parts. Any better ideas?

I always use a potato peeler and it works wonderful. Then I slice the egg plant dip it in egg, roll it in cracker crumbs and fry it. They can be baked too.

I use my regular vegetable peeler after I've used a knife to cut off the top stem. I never have any trouble doing it that way.

A sharp potato peeler works very well.

    Source(s): That's what I use.
