If you do heavy lifting for several months and make strength and size gains will it go away when I stop?

Even if I am eating enough protein and calories.

I am trying to get bigger this winter and am going to eat and lift my way from 135 to 150 hopefully then increase my running but reduce the amount of calories I'm eating but keep the same amount of protein in my diet in order to cut some of the fat that came with it. My concerns are that I will lose strength but keep the size of my muscles or worse lose both.
