Make them into fun designs!
Use toothpicks to make a sheep with cauliflower, and a forrest of broccoli trees with cherry tomatoes as apples!
There is so much room to be creative, have fun!

To encourage your child to eat vegetables is to Blaine fold him so he can taste some vegetables you have. You could also gave him vegetables with a home made dip or you could melt cheese over the vegetables like cheese Brockie.

Don't ever force the issue! Just keep offering different kinds of food, and accept that the child may not like some of them.
When a child is coerced (or tricked) into eating vegetables, they often develop a lifelong hatred of them. When they are allowed to discover foods when they are ready to do so, and avoid what they dislike, they will probably start to like different kinds of veg as they get older, and as their taste buds change.
Most three-year-olds will eat carrot sticks, roasted sweet potato, and cucumber... just offer them, and other veg, as a matter of course. So long as the child is eating plenty of fruit, there's nothing sacred about vegetables.

Take him to a farmer's market where the vegetables are good and in season, then let him pick any vegetable he wants. Let him decide how he wants to eat it, if he wants to dip it in ranch dressing or eat it with cheese, or plain. Kids that age like to be in charge so use that to your advantage.

Why encourage him, when you can force him.
Blend the vegetables to a paste.
Buy a drip feed and when he sleeps attach it in him.

Make the veggies look fun :). Maybe cut them up into sticks so they can just grab one and eat it. Some kids like that.
