What do Christians think about a letter Prophet Muhammad sent to the Christians?
In 628 C.E. Prophet Muhammad (s) granted a Charter of Privileges to the monks of St. Catherine Monastery in Mt. Sinai:
'This is a message from Muhammad, as a covenant to those who adopt Christianity, near and far, we are with them.
Verily I, the servants, the helpers, and my followers defend them, because Christians are my citizens; and by Allah! I hold out against anything that displeases them.
No compulsion is to be on them.
Neither are their judges to be removed from their jobs nor their monks from their monasteries.
No one is to destroy a house of their religion, to damage it, or to carry anything from it to the Muslims' houses.
Should anyone take any of these, he would spoil God's covenant and disobey His Prophet. Verily, they are my allies and have my secure charter against all that they hate.
No one is to force them to travel or to oblige them to fight.
The Muslims are to fight for them.
If a female Christian is married to a Muslim, it is not to take place without her approval. She is not to be prevented from visiting her church to pray.
Their churches are to be respected. They are neither to be prevented from repairing them nor the sacredness of their covenants.
No one of the nation (Muslims) is to disobey the covenant till the Last Day (end of the world).

As far as the letter , Jesus Christ said at Matthew 7:16 that we recognize peaceable Godly men by their actions, not by whatever religion they claim to be. There are people who do wicked things in ALL religions since we are all human and imperfect there are ways we can tell the true religion:
16 By their fruits YOU will recognize them. Never do people gather grapes from thorns or figs from thistles, do they? 17 Likewise every good tree produces fine fruit, but every rotten tree produces worthless fruit; 18 a good tree cannot bear worthless fruit, neither can a rotten tree produce fine fruit. 19 Every tree not producing fine fruit gets cut down and thrown into the fire. 20 Really, then, by their fruits YOU will recognize those [men].

Judging from the next, it will show up that Muhammed was once below the affect that he was once Head of a country who precisely have been HIS residents? Verily I, the servants, the helpers, and my followers preserve them, on the grounds that Christians are my citizens; and through Allah! I keep out towards something that displeases them. Doesn't surprise me. Islam was orginally seen a heretical sect of Christianity. He used parts of the bible to create Islam. You could call Prophet Muhammad one of the orginal "Protestants"

It is with the effort of provoking a fight with a religion that believes that there is only one true religion. And that their religion needs to be protected.

It reminds me of the quote by Ghandi “I like your Christ, I do not like your Christians. Your Christians are so unlike your Christ.” similar sentiments could easily be applied to Muslims

answer: guarantee they won't think much about it since Islam perverts their religion and the bit about not forcing a woman to convert is a dodge since she's considered property and they children she has aren't hers but the father who is a Muslim
