South Carolina Chicken Bog?

I would like to know what spices are used in making south carolina chicken bog, and how much to use. Some generic recipes call for italian spices, but that tells me nothing; I need specifics. Also anything else that might helpful in making this dish would be helpful. Thanks.

    The key to a great chicken bog is in the stock/broth you use to flavour the rice. I cook a whole chicken slowly (2-3 hours) in a big pan, with some veg such as onion, carrot, celery, a couple of bay leaves, a few peppercorns and a whole chilli. Let it cool and discard the veg and fatty skin and bones, skim off any excess fat from the broth. Taste the broth and season if needed, then use the chicken meat, good quality sausage or bacon and maybe a chopped sweet pepper ( people use any veg they have around) to cook the final rice dish.

    Go to Allrecipes.com for Chicken Bog. They call for 2 tbsp. of Italian seasoning. Paula Deen has a recipe on foodnetwork.com. Personally I like a good Jambalaya or a nice Brunswick Stew. I've lived in New Orleans and currently reside in North Carolina.
