That's hard to say, since humans have been mixing substances in order to create new things for longer than the span of recorded history. For a long time, this type of study was known as alchemy.
Robert Boyle (from the 17th century) may arguably be the founder of modern Chemistry, since he coined the phrase "Chymistry" as an exploration of the properties of mixed bodies.
Boyle produced the famous "Boyle's Law", describing the inverse relationship between the pressure and volume of a gas. He also fought for the idea that Chemistry be regarded as a science, and that it should not be limited to antiquated ideas of matter being classified in terms of Earth, Air, Fire and Water. His work is the first to conceive of atoms and molecules in any way that is comparable to modern science, even though his resources were limited in that time.
I think Robert is the most likely candidate as the "father of Chemistry".
