Basically, with pay as you go you do exactly that - pay as and when you send a text, call someone etc, whereas monthly you pay the same amount every month, no matter how much or little you use your phone.

Pay as you go - Top Up when you want
Pay Monthly - Agree to a contract and pay a monthly fee and get texts, data and minutes.
