I would roast some chicken pieces with some potatoes and serve with bok choy and broccoli

Hi Ray,
I'm Sarah, the food editor at Yahoo Shine, and I have three magic words for you: sheet pan dinner! Put the chicken on a baking sheet and roast it. While that's cooking, slice the potatoes and lemons, and toss with olive oil and chopped parsley. When there's about 40 minutes cooking time left with the chicken (I'm assuming you have a whole chicken--if you have chicken parts you could put everything in together at the same time), pull it out of the oven, and add the potato and lemon mixture to the baking sheet. The lemons will get caramelized and delicious while the potatoes are roasting, and you'll have a complete dinner with only one thing to clean.
