How do you get back into writing your stories after taking time off from it.?
It's been a couple of years and it's not like I have issues with remembering my story in progress but every time I open it up, I'm left with blank thoughts. Any suggestions or experiences?

If you've had a break from writing altogether, then you'll probably need some creative prompts to get you back in the writing mood. Reading a good book, trying some short writing exercises online or going to a place that inspires you can all help.
If you've still been writing but just had a break from that particularly story, then perhaps some things related to your story may inspire you - a song that reminds you of the emotions of the characters, a photo or sketch of where it's set etc.
I think part of the problem is that you seem to be opening up your story and sitting down to write, and THEN trying to think of ideas. That wouldn't work for me either - my best ideas come to me while I'm on the bus, or doing chores, or at work. Take some time out but keep your story in the back of your mind, and ideas may start to flow when you're not trying to force them.
If not, you may have to accept that perhaps you no longer find the subject/characters of your story inspiring, which is natural as our interests change over time.

For me, when I hit a block like that, I find it's because I don't know enough about the subject. Or maybe you need to rethink what you wanted to do. The longest I've taken off my current story would be like 4 - 5 months but even when I'm not writing, I keep thinking of the story. Movies I watch, other books I read and poking around through information that only 5% of the book will actually mention or use helps me round out the plot and characters

Maybe shift the focus of the story? Instead of pushing the story you already have, perhaps write a new one along a similar line but with a slightly different focus?
