Flat crumpets I think

Pikelets are those round things, about 3" across and 1/2" deep. They have holes all over them on the top. They should be toasted and buttered. Maybe with jam if you want to be totally decadent.Called crumpets by the uninitiated.
Source(s): I live where that is what they are always called, in the Midlands. - cymry3jonesLv 78 years ago
They're a type of pancake, similar to a drop scone or Scotch pancake..
Ingredients
1 cup (150g) self-raising flour
1 tbs caster sugar
3/4 cup (185ml) milk
1 egg
Melted butter, to brush, plus extra knobs to serve
Method Notes
Step 1
Sift flour and sugar together into a bowl with a pinch of salt.
Step 2
Whisk milk and egg together, then add to dry ingredients, whisking until smooth.
Step 3
Heat a non-stick frying pan over medium heat and brush with a little melted butter. Drop level tablespoonfuls of the mixture into the pan and cook for half a minute or until bubbles appear on the surface.
Step 4
Turn over and cook other side for 1 minute until golden.
Step 5
Allow to cool and serve with butter.
The antipodeans (Aus and NZ) seem to think they invented them!
English Midlands is a fair guess, but specifically I think Leicestershire has the best claim to the name.

pikelets are sometimes known as crumpets. they're usually round with a solid brown base and holes through from the lighter coloured top. they're sold on the bakery counter and are toasted before adding butter and jam, honey, marmalade or marmite.
