If you have any sense at all you do not. Most of these updates are to fix security risks found in the system which might allow a hacker to take control on the machine. Others are to keep your system in line with new developments in web services, so the machine can always display content correctly. Often people who do not update find they can no longer use certain sites as improvements in server programs are not understood by the system. But if you really insist in being unprotected and getting behind with your software you should go to the Windows update in control panel and turn off automatic updates.

You do realise you're leaving the systen WIDE OPEN to virus and malware infections,

    and who knows what else?

Not a very smart idea - if you have a legit version of Windows!!
