Anybody have a good pickled egg recipe? (10 PTS)?

I have taken a liking to pickled eggs. I've been re-using brine from store-bought pickles, but that's gotten boring. I wanna try something new.

I have a gallon glass jar. I've got the eggs. What would you suggest I do from there? I like savory, tangy and spicy flavors.

    If you have never enjoyed the pleasure of a pickled egg or you are just looking to try something new here is some helpful information to get you started. As with all other cooking there is a right way and a wrong way to make pickled eggs. The great news is that when it comes to the pickling part of the creation, it is up to the taste buds of the chef to get the perfect blend of spices and flavors.

    Step 1: Boiling the eggs

    The first stage of pickling is to hard-boil the eggs that you will be using. In a two-quart or larger pan, place your eggs in a single layer. Cover the eggs with no more than one inch over the top of the eggs. Place a lid on the pan and bring to a boil over medium heat. Once the eggs have reached a full boiling point, remove them from the heat and let them cook. Do not remove the lid. Leave the eggs in the hot water for 15 – 18 minutes.

    When the cooking time is complete, drain the hot water and cover eggs immediately with cold water and a few ice cubes. Leave the eggs in the cold water until they are thoroughly cooled. To make the eggs easier to peel, pierce the larger end with a needle before boiling.

    Step 2: Pickling the eggs

    When would a pickled egg be used? There are some who like to eat pickled eggs as a stand-alone snack. Often times they are used to enhance the flavors of sandwiches or salads. The pickling process allows one to enjoy a tasty treat while still maintaining the nutritional benefits of the egg. Keep in mind that even though the eggs do not have to be refrigerated once pickled, it is recommended for home pickled eggs. If they were left out at room temperature for too long, botulism could occur.

    The second stage of pickling an egg is the pickling process itself. This is where your own tastes come into play. The basic ingredient for pickling is vinegar. Add to a 2-quart pan a pint of pickling vinegar (spiced or un-spiced). Let the vinegar heat up and cook gently for about an hour. Leave the lid on so that the fumes do not irritate the eyes of those in the house.

    Place the peeled hard-boiled eggs in a sealing glass jar. Pour the vinegar solution over the eggs and seal the jar. Place the jar of eggs into the refrigerator and leave for at least two weeks before eating. To keep track of the dates, use a marker or label to indicate the date made. After the two weeks has past, you are ready to enjoy your healthy and tasty treats.

    Step 3: Enjoy your creations!

    Now that you know how to pickle the eggs, here are some of the more popular recipes. The great thing is that there are many recipes to choose from or you can come up with your own so that it is more personable. Below are the three most popular pickled eggs recipes.

    1) Standard Pickled Eggs

    You will need the following ingredients…

    12 peeled hard-boiled eggs

    4 cups vinegar

    1 teaspoon salt

    2 medium onions, chopped

    1/3 cup sugar

    1 tablespoon pickling spices

    Place peeled eggs into sterilized jar. In a saucepan, mix remaining ingredients and bring to a boil. Let mixture boil for 5 minutes and pour into jar. Leave standing on the counter overnight and place in refrigerator.

    2) Beetroot Pickled Eggs

    You will need the following ingredients…

    6 peeled hard-boiled eggs

    1 cup cider vinegar

    1 cup beetroot juice

    1/3 cup brown sugar

    ¼ cup chopped onion

    3 whole cloves

    Place boiled eggs into sterilized jar. Mix remaining ingredients in a saucepan and bring to a boil. Stir occasionally. Reduce the heat to a simmer and cook an additional 10 minutes. Take the pan off the heat and let the mixture cool. Pour the mixture over the eggs and seal container tightly. Refrigerate for at least two days before eating.

    2) Spicy Cajun Eggs

    You will need the following ingredients…

    12 hard-boiled eggs 2 ½ cups vinegar

    1 ½ cup salt 2 tsp sugar

    ½ cup water 2 tsp allspice

    2 bay leaves 2 tbsp peppercorn

    2 chili peppers ¼ tsp garlic powder

    Fill glass containers with hard-boiled eggs. Combine remaining ingredients into a saucepan and bring mixture to a boil. Allow mix to cool and pour over eggs. Seal and let stand for 2 weeks before eating the eggs.

    Homemade Pickled Eggs

    12 large eggs

    1 1/2 cups distilled cider vinegar

    1 1/2 cups water

    1 tablespoon pickling spice

    1 clove garlic, crushed

    1 bay leaf

    Place eggs in a saucepan and cover with cold water. Bring water to the boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool and peel.

    In a medium saucepan over medium heat, mix together the vinegar, water and pickling spice. Bring to the boil and mix in the garlic and bay leaf. Remove from heat.

    Transfer the eggs to sterilised containers. Fill the containers with the hot vinegar mixture, seal and refrigerate 8 to 10 days before serving.
