Careful observation of finnage (generally the males will have taller and "pointier" dorsal fins. Also mature females will have a "thicker" or chunkier body profile when viewed from above. This requires two things, practice and fully mature fish.
As to conditioning foods try culturing microworms, or some of the smaller "white worms". Also since they are omnivorous some blanched vegetables once or twice weekly will help. Do a bit of research into "aquatic live foods".
