If i buy arma 2 will there be plenty of full servers for dayz related mods?

yes a lot. Here are some numbers:
DayZ: 6 servers with 20+ players two of which are almost full
DayZ Taviana: 2 servers with 20+ both almost full
DayZ Epoch: 16 servers with 20+ lots of which are almost full
DayZ Origins: Currently down
DayZ Namalsk: Currently down
other than those five it will be hard to find a good server.
