All particles of a particular type will always have the same spin quantum number. All Higgs bosons have spin 0, all electrons have spin 1/2, all photons have spin 1, etc. That can never change.
A non-zero spin does define an orientation in space and that orientation can change thru interactions with other particles, with the caveat that spin is conserved so the total spin of an interaction cannot change.
Like any quantum property, a particle's spin is a superposition of possible states (spin directions). Those generally remain in superposition until a measurement is made at which point the spin takes on a value.
