The really good ones the way they used to make them were just canvas. At least that way you got some good knuckle conditioning too if you train the old way without gloves. The new ones are vinyl so people don't hurt themselves/skin their knuckles and sue the company. You are also wearing gloves now so you don't hurt yourself and wrap your wrists instead of learning proper techniques on how to keep your fist straight when punching.
Vinyl is a rough woven material such as a canvas or cheap vinyl can even be as thin as gauze that is coated with a smooth plastic surface.
