How long to store cured seasoned ground beef for jerky?

I seasoned and cured 5 pounds of ground beef for jerky 4 days ago and stored in a very cold fridge but could not get to it to use it until today. I used a sodium nitrate cure and just wondered if it is still safe to use. Still looks and smells good, no sour smell etc.

    Yes, it's safe. As long as it's been refrigerated it should be fine after only 4 days.

    While it might be safe, why use Ground beef for jerky? Use whole sliced beef.
