I am making a lot of paneer to sell at our local farmer's market. The problem with paneer is that it is a fresh cheese and only keeps about a week. I know in the Himalayas they dry their fresh cheese (Nepal). It is very similar to paneer and I have also heard that paneer can be dried. I need instructions to do this.

I seasoned and cured 5 pounds of ground beef for jerky 4 days ago and stored in a very cold fridge but could not get to it to use it until today. I used a sodium nitrate cure and just wondered if it is still safe to use. Still looks and smells good, no sour smell etc.
