Low maintenance greenery for font lawn/thistle removal?

We have a large gardening area in our front yard from the previous homeowners. It's currently over run with weeds and thistle, and lemon balm. No one in our family really has the time to dedicate to a garden, so I'm looking for suggestions on what to plant there.

I'd like it to be low cost, low maintenance, and that comes back and covers a lot of area. Something colorful, fragrant or useful would also be nice. We do have animals, so nothing poisonous.

The area is in front of windows, so something short would be appropriate.

While we're on the subject, any ideas on how to remove the thistle without destroying my hands??

There is no way to recommend plants without knowing where you live and seeing a picture of the site. To get rid of thistles either dig them out with a shovel if there are only a few or spray with Weed B Gone. (Read the label before using.)

Without some idea where you are, a plant recommendation is not possible.

Regarding the thistle, use a shovel to remove the entire plant --- and wear suitable gloves.
