Can an employer in the UK force employees to take holiday in specific amounts?

My Mum has been told by her employer that their company policy now requires employees to book only full weeks off for holiday, so she can't have a day off for her birthday etc. This is written in some sort of policy, but surely they don't have the right to do that sort of thing?

That some sort of policy is probably her contract of employment which she should have read and signed.

Taking holidays is at your employers discretion

So yes, they can tell you when you can, and when you can't take time off as annual leave
