How long do officers working at point of entry in U.S. usually let you stay ?

Let's say i have B1/B2 visa.I went to U.S. Embassy in my country(Croatia) and got B2 visa valid for 10 years and i bought a ticket to California.So i went to the airport in my city and i filled form required to enter U.S.

I land in U.S. point of entry or wherever you must go to when you get to America and i approach USCIS officer,i think that he will want to examine my Visa and form i filled out.For how long will officer let me stay in U.S. if my intentions are photographing the whole L.A. and maybe going to shooting of my favorite TV show?

Also why would anyone be denied of Visa ?

    You should be allowed to stay for 90 days.
