I'll list the full canon series in release order, and put the year they were released

Metal Gear (1987)

Metal Gear 2: Solid Snake (1990)

Metal Gear Solid (1998)/ The Twin Snakes (2003, this was a remake)

Metal Gear Solid 2: Sons of Liberty (2001)

Metal Gear Solid 3: Snake Eater (2004)

Metal Gear Solid: Portable Ops (2006, the other answer said this was non-canon, but that's incorrect)

Metal Gear Solid 4: Guns of the Patriots (2008)

Metal Gear Solid: Peace Walker (2010)

Metal Gear Rising: Revengeance (2012)

Metal Gear Solid: Ground Zeroes (2014, not yet released)

Metal Gear Solid V: The Phantom Pain (????)

Metal Gear and Metal Gear 2: Solid Snake are 8-bit games. They're a little antiquated, but still quite fun to play. They can be found in the menu of the HD Collection version of MGS3.

Metal Gear Solid is on PS1, but there is a Gamecube remake with the subtitle The Twin Snakes. The remake is the canon version, and overall better, but if you can't play Gamecube games, the original will suffice.

I've no clue why the other answer said Portable Ops is non-canon, Kojima himself has said multiple times it is.

Ground Zeroes is released this March, I believe the 18th, but I may be wrong. The Phantom Pain's release date is unknown, possibly 2015.

All are playable on PS3 if you get the Legacy Collection. You'd get all of them except Rising.

If you're including non-canon ones then Metal Gear and Metal Gear 2: Snake's Revenge for NES are after the original MSX games. After MGS there was Metal Gear Solid: Ghost Babel for Gameboy Color, and then after MGS3 there was Metal Gear Acid 1 and 2 and Portable Ops for PSP.
