Do you have to keep doing what vex and (I forget his name) says or is there someone else I have to talk to to get the quest started. It seems like all I am doing is errands for these 2

Keep progressing along the main Thieves Guild storyline. As for the Skeleton Key, you will get that as well, but the quest is to return it. If you don't complete the quest, obviously, you can keep the key.

You do the thieves guild objectives up to Blindsighted then you can choose to stop doing the objectives and the skeleton key will just remain in your inventory: No, you don't need to do Vex's objectives, they are completely optional. You just do Mercer Frey's objects.
