Is it illegal to have a certain alcohol out on display when they have run out?
I wanted to order a disarrano and coke but they'd run out of disarrano. They had 2 bottles sitting on a shelf but they said that was for display purpose only. Should they have taken those bottles off display if they had ran out of it?

The display bottles probably contained water! You might have grounds for a complaint if they continually advertised something which they rarely or never had available - but not just because something they normally have available happened to have run out when you asked for it. If that was the case, restaurants would have to change their menu every time someone ordered the last of some particular dish.

No, having them on display does not mean that there is a contract to supply the goods, it is just an"invitation the treat". The business should have stocked up though.

No. They can display whatever they like. Just because something's displayed doesn't mean they have to sell it.

They still sell Disaronno when they have stock, no need to change the display.

If you have to ask a stupid question like that you shouldn't be served with any alcohol!
