Don't use boiling water to brew green tea! Unlike black tea, green tea is brewed using cooler water (about 160 F). If the water is too hot, then the tea will be bitter.

What? I assume you mean a hot green tea? You cool it until you can drink it without scalding your tongue

As soon as you've made it, add a small shot of cold water in to it, this way you're not waiting around to have your drink.
