    Whole Chicken

    Vegetables (instead of pasta):

    - 2-4 large Carrots -or- 1 yam

    - 1 potato if not using yam (optional)

    - Brocalli / Spinach / Brussels sprouts / Asparagus;

    - Onion

    Seasoning:

    - TraderJoe's Curry / Cumin & Nutmeg & Cayenne & Ginger & Turmeric & Black Pepper;

    - Dulse &/or Sea salt

    - Garlic

    - Raw Apple Cider Vinegar (Optional, but can be used instead of -or along with- salt)

    Cook the chicken by covering it with water, putting the lid on & bringing it to a boil.

    (Not too fast, and always start with cold water, or the chicken will be tough (I hear).

    Remove chicken from the broth & place the vegetables in it to cook while you debone the chicken.

    Either cut some so they'll all cook at about the same time, or, leave them whole & put the slower cooking ones in first & the faster cooking ones in last.

    Reserve the skin for the trash, or pets, if no one else in the family wants to eat it.

    Toss the bones, but reserve the cartilage on the ends for pets.

    You can put all the seasoning --except garlic, salt, & vinegar-- in the pot to cook along with the chicken.

    Add the garlic very near the end. Add the vinegar after turning off the heat, perhaps allowing each person to add it if they want it.

    My mom always cooked chicken until it fell off the bones, but that is really overdone.

    It should, however, be cooked until there is *no* more pink seen in any of the joints.

    I use a lot of seasoning, but you might prefer using less, or maybe none at all.

    I also prefer the onion to remain crunchy, so try to time putting it in *after* the heat is turned off.

    Or, you can saute' the onions before adding them at the end.

    Add organic Coconut oil for extra energy & health benefits, any time before, during, or after cooking.

    I use more seasonings when Ii use Coconut oil to mask the flavor of Virgin Coconut oil. You can saute' the onion in it.

    I never cook any pasta in chicken soup. My mom only used noodles & onion.

    I much prefer a lot of vegetables & their flavor to be a part of my soup!

    Use big enough bowls so you won't have to get up & serve people over & over again! (;
