@ ned at last I got some one thinking ,,,that's why I put magoes and sugar cane...but then I thought of the Mexicans and the agave cactus plant which they make tequila from ,surley we must have something similar to the agave plant?

Mangoes and sugar cane aren't native to Australia.
I suggest you use Davidson's Plum, Burdekin Plum or maybe Quandong. Maybe add some Grevillea flowers for the sugar content and flavour.

I l ike the marketing concept of Lassiters although being used on Tv and other restaurants I wonder if ASIC will allow it.
