In addition to lavendergal's response this is another possibility..
the soils that we now grow food in has been depleted of nutrients that the plants need to grow. If there are fewer nutrients in the soil to be taken up by the plants the plants themselves are less nutritious than they were 50 or even 25 years ago.
In order to make the products made from these nutrient poor crops nutrients must be added in.

One major reason behind the enrichment of flour is to control the weight and make the body slim and fit.It is tasty to eat with vegetable and it is enriched from nutrition and vitamins.

To make it white, flour is literally stripped of all nutrition. Enriched flour adds nutrition back in artificially. look at whole wheat flour, it never says 'enriched', because it has its original nutrition.
