I'd assume anything sharp with a kick because of the palate dominating nature of IPA. You may not even taste something like Brie. I'm a hard cheese (Smoked Gouda) fan personally. But it sounds like a fun experiment.
Stock up on a handful of cheeses, your favorite IPA, and some friends and have yourself an evening.
