What is a good recipe for cooking pork chops?

My favorite way is by slow cooking them in French onion soup. I add corn starch to the soup so that it will thicken and form a gravy. Then I either cook them in the crock pot or simmer them on the stove. I serve them with hominy and put the gravy over both the chops and the hominy.

Hoosier pork chops. Delicious:
Ingredients
1 medium onion, sliced
3 tablespoons vegetable oil
3 tablespoons all-purpose flour
1 teaspoon salt
1/2 teaspoon pepper
4 boneless butterflied pork chops (1-1/2 inches thick and 6 ounces each)
2 large potatoes, peeled and sliced
1 large carrot, sliced
1 can (14-1/2 ounces) diced tomatoes, undrained
1 cup frozen peas
Directions
In a large skillet, saute onion in oil until tender. Remove with a slotted spoon and set aside; reserve drippings in pan. In a large resealable plastic bag, combine flour, salt and pepper; add the pork chops. Seal bag; turn to coat.
Cook pork chops in the drippings until browned on both sides. Add the potatoes, carrot, tomatoes and reserved onion; bring to a boil. Reduce heat; cover and simmer for 1-1/2 hours. Stir in the peas, cook, uncovered, for 10 minutes longer or until heated through. Yield: 4 servings.

Bone in or boneless p/c ?
I like the thin boneless pork cutlets or breakfast p/c. They cook very quickly in an iron skillet. Like 3-4 minutes.

Ingredients
-Onion: 4 slices
-Salt and pepper (to taste)
-Rice (uncooked): 4 tablespoons
-Pork or 3 Steaks: 4 chops
-Thyme: 1/4 teaspoon
-Marjoram: 1/4 teaspoon
-Green pepper rings: 4
-Tomato and 3/4 cup bouillon or 1 pint Tomatoes (stewed): 4 slices
Brown pork chops or pork steaks into a heavy frying pan over moderated heat. Drizzle rice over meat. Arrange tomato, green pepper and onion over meat. Pour on bouillon. Drizz
