Will it be easy to find a job as a computer engineer?

Computer engineers are inferior to both computer science and electrical engineer. Though you could weasle yourself into either fields with some dedication and elbow grease, being the child of both fields, it isn't as strong as either. It's only strength over the two are in hardware design where the embedded programming makes it stronger than the typical EE and the EE background makes it stronger than a traditional CS.

The difficulty of finding a job is dependent on your location. Since it is such a new and small specific discipline, if you do not want to enter the worlds of CS or EE, you will definitely have to try for hardware manufacturers which aren't as proportionally distributed as CS or EE.
