I'm not really sure what you're asking. In the UK you have to do A Levels or an apprenticeship now anyway until you're 18 so id suggest doing 3 A Levels like everyone else.
You won't get into a university with one A Level, so no I don't think that it will count.
When applying for a job, they'll wonder why you only did one..your application will be weaker than anyone else applying for the job, and they'll think that you have no dedication or that you're not a well rounded person, as you felt you could only study one subject.
