I'd have thought that you need to take the log-book supplement (do you only have the New Keeper supplement? The former owner should be posting the V5 to them, with your details filled-in as New Keeper) to your local Post Office and fill out a form they keep there for your Tax, which you only complete when you do not yet have a V5 showing your name on it. Ask them, they should tell you.
