Amylase enzymes vs malted grains?

I'll be using amylase enzymes for the fermentation process of converting starches to fermentable sugars, instead of malted grains, such as barley. My question is, how much should I add for a 5 gal mash?

    Amylase enzymes convert starch to sugar

    Amylase enzymes are not a substitute for starch.
