With 7 you will have to get something with a '3rd' row seat. Not sure what size range the kids are now but keep in mind that they get bigger quick. None of the 3rd row seats are good for much other than smaller kids, no leg room and difficult access. Some of the vans and not huge SUV's even have pretty cramped 2nd row seats so be sure to look at that and consider the size of the kids now and their size over the next few years you plan to have this rig. The next thing that really becomes a problem is cargo space. As you know with 3 kids come with baggage literally. Even if you are not going on a family trip just going to the store you need some cargo space for what ever you are buying. Most of the 'mini vans' and smaller SUV's pretty much have little to no cargo space behind the 3rd row. Maybe a couple grocery bags sideways if you are lucky. Will that work for you? IF so no problem if not then you may be stuck looking for something more like a Suburban or Expedition sort of thing. Those leave you some cargo space for usual stuff plus can easily tow a trailer if you are the vacation sort of family. The trailer could be a simple cargo trailer, camper, boat, whatever. Some of the mini vans can tow a little but if you look at the actual specs you can't tow the 3000 pounds if you have a full load of passengers and other cargo. Something like a Burb will not have a problem being fully loaded.
Most of the people I know have something big like a Suburban that they use when they need to drag the whole family around and then a smaller SUV or mini van for when its just part of the family. The person with the least driving takes the Burb when its not needed for its capacity and the one putting on all the miles drives the smaller rig to the store, and all the after school activities.

With your needs, a minivan is the way to go.
A lot of people don't grasp that a large SUV has LESS room inside of it than a comparable minivan. The SUV sits higher off of the ground, so all that space is outside of the car, and not inside of it.
Without knowing your budget, one cannot specify a model for you. The Honda Odyssey and Toyota Sienna are great minivans, excellent in quality, which is why they are quite a bit more expensive than the crappier domestic models.

A Chevy Suburban is good but a little big. Another one is a Chevy Tahoe or Traverse. A smaller car is a Ford Flex. The Tahoe and Suburban can seat up to nine.
