If an update comes out for any apps you have, the update is automatically applied without you having to get involved. Turning it off might save a small amount of your battery but not enough for you to notice. The updates don't come very often, unless you have a huge number of apps.

In the background (when youre either not using your phone, or when your using it on a different app), another app such as email, can retrieve while not using, or a game can update etc.
