What is the part name for that green panel power supply as seen in the video? I use an NI MyDaq for school use, but it looks like using that component would be convenient for projects at home. Any help is greatly appreciated.

Looks like a "breadboard companion".
It's not a power supply, it's probably a thing to provide pulses and LEDs
