tuna fillets....?
help. my wife bought some ahi tuna fillets for ME to cook today. kindly help me out and provide some good tips on how to prpare and season them>>

yummm. The best way to cook the tuna is to just sear the outside and leave the inside raw. If you want a fancier tuna you can mix a bunch of different spices and season it with that but basically its just salt, pepper, garlic maybe and then throw it on the barbeque just until grill marks appear, then flip it over.

Tuna is best cooked quite rare. Just in case you have not cooked them yet, here is the recipe I use most often.
Blackened Seasoning Mix or Rub
Recipe can be doubled or tripled
2 teaspoons ground paprika
4 teaspoons dried leaf thyme
2 teaspoons onion powder
2 teaspoons garlic powder
1 tablespoon brown sugar or granulated sugar
2 teaspoons salt
2 teaspoons black pepper
1 teaspoon Chipotle chili powder or ground cayenne pepper, or to your taste
1 teaspoon dried leaf oregano
3/4 teaspoon ground cumin
1/2 teaspoon ground nutmeg
Preparation:
Place all ingredients in a jar and store in a cool dark place. Shake jar well before each use.
To Cook Blackened Chicken, Steak or Fish
Over low heat, melt about 3 tablespoon of butter in a nonstick skillet (enough butter to cover fish and the bottom of the pan). As soon as the butter is melted, place the fish in the pan, flipping it over to cover both sides with butter. Then generously coat the fish with the seasoning, flip over again and coat the other side with seasoning.
Now turn up the heat to medium-high and cook on one side until blackened and somewhat crispy. Flip over and cook the other side. Add a little more butter whenever necessary. Thanks to Liz for sharing this recipe.

If you don't like spicy, you can marinate the tuna in minced garlic and soy sauce or in Sesame Ginger Teriyaki salad dressing or marinade for an hour or so. Wipe dry with paper towel and either grill for 2 minutes per side or panfry in a hot skillet.
Note: If you don't like almost raw fish, you can cook it longer but it will be on the dry side.

With any tuna I use a basic seasoning, a bit of oil, like a beef steak, grilled ir pan fried, I would not take them past medium, tuna tends to be dry if over cooked.

the best thing to do is to google "tuna fillet recipes".
We do not know what ingredients you might have in your house.
Look over the options you have in online recipes, and choose one that you have all the ingredients for.
I have gotten rid of all my cookbooks, saying only 3 ... because I no longer use them. I just look online when I want a recipe.
