What should I do with these tomatoes?

We were saving seeds today and the tomatoes without the seeds are left in bags for us to take home, do you think I can freeze it like this in these bags or what?? Thanks for the advice. I have three bag full of these tomatoes I think I could make sauce but I don't want to yet. So yeah not sure if I should I freeze them as is... Thanks again!

    I would lay them out on a cookie sheet to freeze then put back in bags after they are frozen if you want them frozen. separated, the skin will slip off easily when defrosted! Just hold under running water for a couple minutes and slip the skin. Then you don't have to deal with the skin when making sauce.

    Hint for dinner tonite: use those hollow tomatoes to stuff salad in! I like deviled ham or beef, tuna, chicken, etc then stand the tomatoes on lettuce or spinach leaves to serve.

    Freeze the tomatoes or puree them in a food process or and freeze. That way when you are ready to make sauce, you will just have to defrost the tomatoes and add the rest of the ingredients.

    If you're left with a lot of skins and not much tomato flesh, then either compost or make into a tomato stock where you just roast them in the oven with whatever other herbs and veg you have around (onion, garlic, carrot, celery etc), blend then sieve ( I just leave in sieve over a bowl overnignt then press to get every bit of juice) to get rid of skins. Makes a great base for soup, sauce or gravy.

    Or freeze for now as is if you don't have time.

    TRY to make the Sauce NOW- BEFORE You Freeze it. Tomatoes lose a lot of Quality if They're frozen FIRST -& Then Processed. :)

    yes you can freeze them just like that in the bag. When you are ready to make sauce, add the frozen ones.
