What would happen if I take my SIM card out of my iPhone 5S and put it back in?

I'm going to China in 13 hours and am bringing my iPhone 5S. My parents were worried my iPhone would get charged in China because we don't have the international plan so I asked my provider. He said that if I don't call or use my phone data then it shouldn't charge me but I should take out my SIM card just in case it gets signals and starts using data or something. I know that if I take the SIM card out, I would lose signal but the apps on the phone still work as long as it doesn't need wifi. I was wondering when I put the SIM card back in when I come back to the USA, would anything happen?

    It's kind of like, your not using your phone anymore if you take it out. Yes, take it out while in China and use it over WiFi then come back to your native country put back your Sim. Everything will be back to normal except you might still have to pay monthly for it even if you don't use it..

    No, nothing would happen.

    Also, you don't need to take out the SIM. Just put the phone in Airplane Mode & leave it there until you return. That disables the cellular & data radios in it. You could turn back on wifi while still in that mode to use that.
